As curtisi has indicated I would suggest editing (or creating new email template), but ensure you add more variables to which you can then populate event fields into.
1. Identify from a sample event, the structure of the event fields and which fields you wish to include in your mail
2. Create or update an existing email template to allow this quantity of variables to be populated
3. Update the Rule to use this template and drag and drop the identified fields on to the variable entries
